Depending on the flowers the bees have visited, honey can smell floral, herbal, green, waxy, even a little medicinal. Some varieties have an almost animalic quality. There is a whole world of scent inside a jar that has very little to do with sweetness.
We wanted to explore that diversity, as seen through the markets of the world.
Souk Honey begins among the flowers. Orange blossom and neroli give the opening a bright, slightly bitter freshness. Jasmine adds softness. Then cardamom begins to pull the fragrance in another direction, introducing the dry warmth of spice.
Marigold brings a green, almost pollen-like edge. Date syrup adds the richness of dried fruit. Beneath everything, amber, sandalwood, and manuka honey create a warm, golden finish.
Imagine a market late in the afternoon. There are crushed spices in barrels, dates wrapped in paper, dried florals hanging. The sun has been warming everything for hours.
